Monbazillac is a wine with an Appellation d’origine contrôlée(AOC) (a Protected Designation of Origin PDO). Therefore, its production is
subject to several specifications that guarantee its quality. This AOC has been
recognized since 1936. |

Monbazillac is made
from a blend of three grape varieties: Sauvignon, Semillon and Muscadelle.
The smoothness of
this wine comes from "Botrytis cinerea", a fungus that attacks
the grape cluster when it is ripe. It is called the "noble rot"
(« pourriture
noble »). |

The harvest, known
as "late" (in French "vendange tardive"), takes
place in October and is done by hand to ensure the final quality of wine.
